    We use Carmelina brand Italian San Marzanno tomatoes that are Non-GMO certified and come to us without water, sodium chloride, salt or citric acid added.

    Grown under the shadow of Mount Vesuvius, where the fruit flourish in the Mediterranean climate and the region's nutrient rich, volcanic soil, San Marzanno tomatoes are considered superior not only for their intense flavor, but also for their cancer-fighting properties. They are bright red and high in density and pectin.

    Sweet potatoes are a great source of B6 vitamins, which are key at breaking down homocysteine, a substance that contributes to the hardening of blood vessels and arteries, according to the Harvard University School of Public Health. Sweet potatoes' potassium content is also has benefits to improve hearth health, as it lowers blood pressure by maintaining fluid balance, as explained by the American Heart Association.

    We make it ourselves! For each small batch of sauce, we use the cuttings from our hand trimmed carrots, onions, broccoli, garlic, mushrooms, and parsley and simmer them in filtered spring water. 

    Sure, it would have been easier to do like all the other companies and just add water or use a packaged vegetable stock, but then we wouldn't be holding true to our own values and mission.

    Onions are excellent source of Vitamin C, sulphuric compounds, flavonoids and phytonutrients. A particularly valuable flavonoid in onions is Quercetin, which acts as an antioxidant that may be linked to preventing cancer. Quercetin has the benefits of reducing the symptoms of bladder infections, promoting prostate health and lowering blood pressure. 

    Other important phytonutrients in onions are disulfides, trisulfides, cepaene and vinyldithiins. All are helpful in maintaining good health and have anticancer and antimicrobial properties.

    How did we keep from adding preservatives and sugars? We added a bunch of blueberries instead!

    Blueberries are natural preservatives to help our products be shelf stable, and when cooked just a little, blueberries give our sauce that little added sweetness.  We add the blueberries to the cooking process, like many of our ingredients, as late as possible to ensure we maintain as much nutritional benefit as possible.

    Parsley is a very good source of volatile compounds such as myristicin, limonene, eugenol, and alpha-thujene.  Traditionally, parsley was used as a medicine for diabetes in Turkey research supports this and its benefit as a rheumatoid arthritis controlling agent.

    We use non-concentrated, squeezed Valencia orange juice to ensure quality and plenty of pulp for the fiber. Orange juice is a great source of Vitamin C and fiber.

    Lemon juice is high in Vitamins C, B6, A, E, folate, niacin, copper, iron, and many others. It's a fruit that contains flavonoids, which are composites that contain antioxidants and cancer-fighting properties.

    Polyphenols are the antioxidant and anti-inflammatory agents that fight disease.     Avocado oil is the natural oil pressed from the pulp of an avocado.     We chose maca root because it is a magnificent superfood and natural emulsifier which allows all of the ingredients to blend nicely into a smooth sauce. Maca is also a good source of phytonutrients.

    We wouldn't feel right if we set out to make the best sauce and scrimped on the quality of salt. Although we attempt to only use just enough salt to enhance the flavors of the other ingredients, we had to use the best quality salt we could find.

    Pink Himalayan Salt includes 84 minerals and electrolytes which are in an ionic molecular form vs white sea salts much lower mineral count which is of a colloidal form..in other words, it's better for us.

    Just so happens pink salt renders more flavor without raising the sodium content as much white salt, so we need less to help foods taste good.

    Cooked spinach is more nutritious than raw...but don't cook it too long. We add spinach to our recipe at the absolute last minute to ensure we maintain as much nutritional benefit as possible.
